A healthy, quick side dish. A squeeze of lemon juice gives the spinach a pop of flavor.
In a large sauté pan combine spinach and oil. Cook the spinach until it is almost wilted – about 3 minutes. Add minced garlic, salt, pepper and lemon juice if using. Continue cooking until the garlic is no longer raw – about 2 minutes.
Taste for seasoning. Spinach cooks down quite a bit. If you’re serving more than 2 people, you will want to double the recipe.
