This recipe is the ultimate quick dinner! By baking the quesadillas you can cook all of them at once. They get just as crispy and delicious as the traditional ones made on the stove top.
Place on the lower half and third of oven. Bake for 5-7 minutes on one side. Flip and continue cooking for 2-3 minutes. The quesadillas on the lower rack may cook a bit quicker than those higher in the oven. The more quesadillas you are baking the longer the baking time will be. You may find the quesadillas get crisp enough without flipping.
The quesadillas in the pictures only have cooked red bell pepper. You can choose any combination that your family will enjoy.
I've also made these with gluten free tortillas. They get a bit crispier, so probably won't need as long in the oven.
