Strawberry and Feta Salad

Salads are one of my favorite lunch or dinner options. I especially love ones that balance sweet and salty - like this strawberry and feta salad. The combination of sweet strawberries with briny feta, salty sunflower seeds, and herbaceous hints of basil make for a salad that truly impresses. If you're interested in making this salad as an entree, top it with some grilled chicken or steak.

If I'm going to a potluck, this is a go-to option. I bring the dressing in a container with a secure top and place all of the salad fixings in the salad bowl and cover with plastic wrap. I mix it with the dressing right before eating so everything is fresh.

Salad Fixings

A great way to make this salad an entree, is adding chicken. To make it as easy as possible to you could just grill chicken that has olive oil, salt and pepper on it. If you're looking at add a bit more flavor, I suggest cooking the chicken in a pan with some chicken stock, lemon juice, minced garlic, and salt and pepper. While this takes more time, the extra flavor is definitely worth it.

You could also add some pecans or sunflower seeds to salad if you want more substance and texture. Another option is adding croutons, which adds a nice crunch and savory element.

Strawberry & Feta Salad

A summer salad at its best! The sweet strawberries, salty and briny feta, and nutty poppyseeds makes this salad slightly sweet and salty. While it's a great side dish, it's also delicious as an entree salad - just add some grilled chicken!

Dressing Ingredients

  • 2 tablespoons champagne or white wine vinegar
  • 1 tablespoon lemon juice
  • 2 teaspoons poppy seeds
  • 2 tablespoons sugar
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • Pepper

Salad Fixings

  • 1 head or bag of romain lettuce chopped
  • 2 tablespoons basil chopped
  • 1/4 cup roasted sunflower seeds
  • Crumbled feta to taste
  • 6 strawberries sliced


  1. In a small bowl, combine all of the dressing ingredients. Refrigerate until ready to serve. In a large salad bowl, combine salad fixings. Top with dressing. Don't add all of the dressing at once. Add 2/3 and then add a bit more at a time, so it fits your taste.
