A quick healthy side
Spinach comes together in no time, which is why it's my go-to weeknight side dish. If you're needing some extra nutrients and not sure what to make or tight on time, this is the recipe for you.
Just keep in mind - spinach cooks down A LOT! An 8 ounce bag cooks down to just 2 servings of sautéed spinach. So, if you're serving 4 or more people, you will want to buy the extra big bag.
what to serve with spinach?
A healthy, quick side dish. A squeeze of lemon juice gives the spinach a pop of flavor.
- 1 bag spinach 8 ounces
- 1 tbsp oil
- 1 garlic clove minced
- ¼ tsp salt
- light squeeze lemon juice optional
In a large sauté pan combine spinach and oil. Cook the spinach until it is almost wilted – about 3 minutes. Add minced garlic, salt, pepper and lemon juice if using. Continue cooking until the garlic is no longer raw – about 2 minutes.
Taste for seasoning. Spinach cooks down quite a bit. If you’re serving more than 2 people, you will want to double the recipe.
