Healthy & go-to green beans
My husband's favorite vegetable is green beans. He especially loves them sautéed in oil and garlic. Even though green beans often have the reputation to be mushy or limp, this recipe proves those misconceptions wrong!
To help with the cooking process, I suggest boiling the beans in water for about 6-7 minutes. This cooks the beans about 2/3 of the way and then you finish the cooking process in a pan with oil. A final finish of minced garlic and seasoning makes for a finger licking delicious side dish.
These beans make excellent leftovers too. Just reheat in the microwave for about 1 minute and you have yourself a delicious side dish for lunch or dinner later in the week.

Sautéed Green Beans
- 2 cups water
- 1 pound green beans
- 1 tbsp oil
- 2 garlic cloves minced
- ¼ tsp salt
- In a large sauté pan add water and green beans. Turn heat to high and bring water to a boil. Lower heat to medium and simmer for 6-7 minutes.
- Using tongs, transfer green beans to the serving bowl.
- Dump water down drain. Be careful because the water and pan will be very hot. Use oven mits.
- Place green beans back in hot sauté pan, add oil, minced garlic, salt and pepper. Turn heat back on to medium. Sauté green beans until the garlic cooks and coats the beans – about 2 minutes. Taste for seasoning.
