Earthsprings Salad/Smoothie

Two of my favorite things to eat are salads and smoothies. Even though making these items from scratch may seem like a lot of work, they really aren't! However, in order to make salads and smoothies taste delicious, I highly suggest you use high quality ingredients.

I've recently been cooking with Earthspring Organics. Earthspring Organics is a local company (a huge bonus in my book ) that uses a hydroponic system on a vertical farm. They harvest and deliver their organic lettuces daily to offer their customers fresh products. Their products can be found in most neighborhood grocery stores including Natural Grocers, Macey's, Dans, Dicks, Clark's, Fresh Market, Winder Farms, Kent's Foods, and Davis Food & Drug. If their products are not in your local grocery store, they encourage you to request their products from the produce manager. Fortunately for me, they will be in Harmons and Smith's soon!

Below are two of my favorite recipes that I made using Earthspring Organics greens.

Citrus Salad

One of my all time favorite salads is here for you! The dressing is light, easy, and pairs well with any entree.

Servings 4

Ingredients

  • 2 tablespoons orange juice
  • 2 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • ¼ cup olive oil
  • 1 small shallot optional
  • ¼ teaspoon salt
  • Pepper

Salad Fixings:

  • 1 bag mixed greens
  • 1/3 cup crumbled goat cheese
  • ½ cup pecans chopped

Instructions

  1. In a bowl, combine all dressing ingredients.
  2. In a salad bowl, combine salad fixings and top with desired amount of dressing

Energy Booster Smoothie

Ingredients

  • 1 1/2 cups spinach
  • 1 banana
  • 1/2 cup mango, diced
  • 1 tbsp almond butter
  • 2 tbsp coconut manna
  • 1/2 - 1 cup milk, almond or cow's use the amount of milk that results in the consistency you want
  • 1 tbsp chia seeds for topping, optional

Instructions

  1. In a blender, combine all ingredients except chia seeds. Add 1/3 cup of ice and blend until smooth. Pour into a cup and top with chia seeds.
