Pesto Chicken Bake
This is a go-to dinner because it's easy to make, delicious, and makes delicious leftovers. If you're tight with time, I highly suggest buying pre-made pesto. Yes, homemade pesto is absolutely delicious but making it on a weeknight is often not realistic.
Keep in mind not all pre-made pestos are created equal. Some taste much better than others. So, it may take some taste testing to find your favorite pesto.
Pesto Chicken Options
Pesto chicken is rich, savory and easy to make. It goes great on sandwiches, with pasta or rice and veggies.
- 1 ½ pounds chicken tenders or 2 chicken breasts cut into tenders
- 1 tbsp oil
- salt sprinkling
- ¼ cup pesto
- 4 or 5 pieces of provolone cheese
- Preheat oven to 400 degrees. Line a baking sheet with foil. This will make clean up much easier.
Place chicken tenders on foil. Do a light sprinkling of salt and pepper on the chicken. Place a small spoonful (about 2 tsp) of pesto on each tender. Smear the pesto on top of each tender.
- Bake the tenders for about 25 minutes. Turn the heat to broil. Top each tender with ½ slice of provolone. Return chicken to oven and broil for about 2 minutes or until the cheese has browned a bit and is bubbly.
Serve on top of toasted sourdough bread and a spread of mayo, in pasta with oil and cheese or with rice and roasted veggies.
