Coffee Cake Muffin Recipe - Easy Breakfast

These coffee muffins are perfect for breakfast because they aren't overly sweet and pair beautifully with my favorite morning beverage - coffee! They are studded with a brown sugar and cinnamon streusel, which just puts them over the top in deliciousness.

Coffee Cake Inspiration

The inspiration for these muffins was from a place Ian and I used to frequent while we lived in Portland, Oregon - Jim and Patty's Coffee. If you're ever in Portland, this place is a MUST. Their coffee cake is to die for. It's not your traditional coffee cake. It's actually better. Bigger, a lot of different flavors, and casual atmosphere  - it's a great place to hang out and relax.

While I tend to not eat muffins for dessert, these actually call, or scream, my name after dinner. I think it's the streusel - it's just too good to resist.

I suggest making a double batch because the recipe only makes 7-8 muffins.

Easy to-go breakfast

Another reason to make this recipe is the ease. If you're anything like me, morning time can be insane. Getting the kids dressed, making breakfast, getting lunches ready, getting your bag ready for work, etc. Why not take one step out of that equation and have a breakfast the kids and yourself can grab and eat on the go. Yes, I love having a relaxing breakfast at the table while chatting with the kids, but how realistic is that? Especially during the work week. Coffee Cake Muffins

If a muffin could be everything you ever wanted, this would be it. Studded with struesel bits and light, airy cake makes for a muffin that I could eat all day, every day. While I especially love these muffins for breakfast with a cup of coffee, they also hit the spot as a mid-afternoon snack.

Cook Time 20 minutes
Servings 7


Ingredients for Batter

  • 1/2 cup granulated sugar
  • 6 tablespoons butter softened
  • 2 eggs
  • 1/2 cup + 1 tablespoon sour cream
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Ingredients for Streusel

  • 1/8 cup brown sugar
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter cold and diced
  • Salt pinch


  1. Preheat oven to 350 degrees.
  2. Cream the butter and sugar for about 2-3 minutes.  Add the eggs and continue mixing.  Once the eggs are fully incorporated, add the sour cream and mix for an additional minute.  Using a spoon or a spatula, incorporate the dry ingredients.  Scoop into a muffin tin.  Top each muffin with a spoonful of streusel.
  3. To make the streusel, combine all ingredients in a bowl.  I use my fingers to break up the butter.
  4. Bake muffins for 20-25 minutes.
