While these bean and cheese burritos are delicious without chicken, if you're wanting to make them a little heartier, I suggest adding some chicken. What I usually do is add leftover chicken, that way I don't have to make an extra dish. For example, I take leftover lemon chicken that I've made on Monday and use it on Wednesday for my burritos.

Lemon chicken may sound weird in a bean and cheese burrito, but the acidity in the chicken goes beautifully with the richness of the other ingredients. If you don't have leftover chicken, you can buy a rotisserie chicken and shred the meat.

If you're wanting to go vegetarian, you can add sautéed veggies. Or can keep it simple and just do refried beans and cheese!

Bean and Cheese Burrito (And Chicken Too)

Bean and cheese burritos don't just have to be for kids. This is one of the easiest dinners you'll ever make. If you want some more protein and texture, I suggest adding chicken.

Servings 6 burritos


  • 6 medium or large tortillas
  • 16 oz. refried beans
  • 2 cups shredded cheddar cheese
  • rotisserie chicken chopped or shredded (optional)


  1. Preheat oven to 420 degrees.

  2. Line a baking sheet with foil. Spray baking sheet with non stick spray.
  3. Place a tortilla on a plate. Scoop ¼ cup refried beans and place closer towards one end of the tortilla. Add 4 pieces of chopped chicken - if using. Top with a handful of cheese - about ⅓ cup.

  4. Fold up like a package. Place seam side down. Spray the top with non-stick spray.

  5. Place in oven. Bake for about 7 minutes or until the bottom is crispy. Flip and continue baking for about 7 minutes or until crispy.

  • Salsa
  • Guacamole 

Leftover Burritos

If you have leftovers, these bean and cheese burritos freeze beautifully. First, make sure they are completely cooled. Then, wrap in plastic wrap and then foil. Freeze for up to 3 months. To reheat - microwave for about 1.5 minutes on one side, flip and continue microwaving for about 30-60 seconds. Just keep in mind they will be hot when you flip. And they will lose their crispy exterior, but they still have excellent flavor. I also just microwaved one at a time.
