Mustard salmon is one of the quickest recipes out there. Just place some oil and mustard on each filet, sprinkle with pepper and bake. This recipe is delicious with blistered cherry tomatoes - 2 cups of cherry tomatoes on the same baking sheet, cover with 1 tablespoon oil, sprinkle with salt and pepper, and bake with the salmon. Baking the tomatoes makes them slightly sweet and truly delectable.

The great thing about this mustard salmon recipe is its versatility. Twice baked potatoes or company potatoes are delicious side options. Also, a caesar salad is an excellent option if you're wanting to make an entree salad. If you have extra salmon, it also makes great leftovers throughout the week.

Easy Mustard Salmon

Another easy weeknight dinner. As long as the salmon is not frozen, you can prepare and cook this recipe in about 15 minutes.

Ingredients

  • 4 salmon filets
  • 4 tsp oil
  • 4 tsp Dijon
  • Pepper
  • Lemon wedges
  • 2 cups cherry tomatoes optional

Instructions

  1. Preheat oven to 450 degrees.
  2. In a baking sheet lined with foil, place each salmon filet. Smear 1 teaspoon oil and 1 teaspoon Dijon mustard on each filet. Sprinkle each filet with some cracked pepper. I wouldn’t add salt at this point. Since Dijon is already salty, I would taste the fish once it’s done cooking and see if you want to add a sprinkle of salt. Cook in oven for about 10 minutes. Serve with lemon wedges.
  3. You can also grill the salmon. Start with skin side down and grill for about 4-5 minutes with the hood closed. Flip and cook for an additional 4-5 minutes.
  4. If you want blistered tomatoes, cover tomatoes in 1 tablespoon oil and dash of salt and pepper. Spread on baking sheat around the salmon. The tomaotes will become tender and slightly sweet.
